Mixologist: Maestro Dobel Moda Vieja

Let’s just jet this out of the way: this cocktail is elaborate to the point of absurdity. But it’s fun. At least forty-eight hours prior, you will need to make the clarified cola syrup (assuming you can’t buy any). When you assemble the cocktail, you will need a lighter.

First, how to make the clarified cola syrup: 2 oz. neutral alcohol, 2 drops oil orange, 1 drop oil cinnamon, 3 drops oil lemon, 0.5 drops oil coriander, 1 drops oil nutmeg, 1 drop oil neroli. Mix and shake frequently for forty-eight hours.

Ingredients

2 oz. Maestro Dobel tequila
½ oz. clarified cola syrup*
2 dashes black tea bitters
1 orange peel, cut into a disk

Directions

Pour all ingredients into a rocks glass, stir until chilled. Hold the lighter in one hand, the orange peel in the other. Squeeze the peel such that the juice from the skin mists over the glass, but while you do that, ignite the lighter such that the juice catches fire. Then rub the orange peel along the rim of the glass before garnishing with the peel.
