Mixologist: Maestro Dobel Piña Loco

The key to making this cocktail perfectly is a really vigorous shake, which will give it a texture so creamy that it can be mistaken for a sour. Important note: pineapple shrub is made with six parts pineapple juice and one part apple cider. Use a balanced apple cider, like Pommies.


2 oz. Maestro Dobel tequila
1 ½ oz. pineapple shrub
3 dashes mole bitters
1 pinch salt
Pineapple leaf for garnish


Pour all ingredients into a cocktail shaker, shake and fine strain into an iced coupe or rocks glass. Garnish with a pineapple leaf.
