Love sriracha? You and everyone else. That’s how this Sosu Barrel-Aged Sriracha ($25) is already funded—and then some—on Kickstarter, with weeks left to go. Would barrel aging actually do anything to hot sauce? In our professional opinion as whisky snobs, yes—once you get past the heat, the oak’s tannins will probably bring out sweeter flavours. If the barrels are heavily charred, there may even be some vanilla or nuttiness. We assume that the barrels are bourbon barrels, and given that a barrel can have up to eight gallons of whisky still soaked into it after it’s been emptied, that flavour would go into the sriracha too. Only one way to find out!
